Rice with Ostronskivling

(Kinoko no Takikomi-gohan)

Hej, Friends! It’s such a long time ago since I met you here. Now I am gradually coming back to normal life again. During my sick time, I gained 15 kg! Now, it is time to think about healthy food and exercise.

Autumn is one of the best seasons for food lovers. I made simple rice with Ostronskivling today. Smells fantastic (almost like butter!) and tastes very nice.

Here is the recipe.

Ingredients
250g Ostronskivling
400 ml Japanese Rice (or you can use gröt rice)
450 ml Water
3 Tsp Sake
2 Tsp Japanese soy souse
One peace of Konbu (if you don’t have it, you can skip it)

1. wash rice 3 or 4 times with water and let it rest in a basket.
2. cleave or cut mushrooms in small piece and boil together with Sake and Japanese soy souse.

3. put rice, water, boiled mushrooms (with soce) tighter in a thick pan and finally Konbu, then turn on the heat. (middle to high temperature)

4. once it’s start to boil (you can see strong steam from pan), turn down the heat to the smallest fire (or “no 2” with electric oven) and keep it boiling slowly 10 min.
5. after 10 minutes, turn of the heat.
6. wait 10 minutes with out opening the lid.
7. finally orpen the read and take out the Konbu (if you have) and mix it like cutting. (don’t destroy the rice)

Attention!
Don’t open the lid during boiling and lesting.

Please enjoy!

Pumpasoppa lagat av jordgubbsglass

I wrote about my pumpkin experience in Sweden last year. I will never make the same mistake this season but I really want to try to cook nice food from non Japanese pumpkins.

Pumpkin soup is one of the nicest dishes to cook with yellow pumpkins. You can boil pumpkins with vegetable or chicken stock and mash them with the food blender. You can add cream or milk as well.
Very easy, warm and nice. I know usually Swedish people don’t eat pumpkin but please try some time.

And of course my favourite Japanese pumpkin “Hokkaido” is the best. I will cook a Japanese dish this time as well!

Here is the recipe for "Kokt Japansk punpa".

Ostronskivling i Japonsk mat

Rice with Ostronskivling soy sauce taste.

The best is Ostronskivling miso soup!

Kokt Japansk punpa “Hokkaido” lagad av jordgubbsglass

One of my most favorite vegetables is pumpkin. Unfortunately, it is very difficult to find pumpkin in Sweden. Some times you can find pumpkin at the supermarket but it is totally different from Japanese pumpkin. It tastes like melon, very watery and sweet. Just when I came to Sweden, I cooked pumpkin with Japanese taste but it was just awful. ojojoj.

I heard that you can get Japanese type of pumpkin in Sweden only in autumn in Sanai, a Japanese food shop in Stockholm. The person who works in Sanai told me that the pumpkin “Hokkaido” is Japanese type of pumpkin which is harvested in Sweden.

I have several types of favorite Japanese pumpkin recipes but the best is a very simple one, just boiled with soy souse.

Kabocha no nimono (boiled pumpkin)

Japanese Pumpkin 400-500g
Dashi (Fish stock) 400ml
Mirin 50 ml
Sake 50ml
Sugar 1 table spoon

*Soy souse (Usukuchi) 30 ml

(You can get all the ingredients in these shops for example.)

Cut Pumpkin like this.

Put Pumpkins and all the ingredients except soy souse.

Cover with an aluminum sheet and boil it at high temperature until the water boils.
Once it has boiled, use low temperature (no 3) and boil it 10 to 15 minutes.

Add soy souse and boil 5 more minutes.

You can eat it just after you cooked it but the best way to eat it is to let it cool down naturally and warm up again before you eat it. Pumpkin will suck up all the nice taste when it gets cooled down.

Smaklig måltid!!
