Smørrebrødはデンマークの代表的な料理です。Smørreはバター、brødはパンを意味しており、バターを塗ったパンにさまざまなトッピングを乗せたオープンサンドイッチです。読み方は・・・カタカナにするのがとても難しいのですが、おそらく、こんな感じ。“スメェッレ・ブレェー”。

私はデンマークに行ったときにはじめて、Smørrebrødを食べました。比較的小さいサンドイッチなので、好きな味を2、3品食べることができます。そのときの話はまた今度にして、今回は、スウェーデンで食べれるSmørrebrødを紹介します。

オステルマルム・ハレンにあるNYBROEでは、マーケットの中で気軽にSmørrebrødが楽しめます。ここのものは大きめなので1つで十分かもしれません。サッパリしたハウスワインの白とよく合います。私の一番のお気に入りはローストビーフのもの。黄色いレモラードソースといっしょにいただきます。上に振りかけてある白いものは、チーズではなくて、ホースラディッシュの千切りです。ほのかな辛さがちょうど良い感じです。

席の横はチーズ屋さん。こんなに大きいVästerbottenost(ベステボッテン・オスト・チーズ)初めて見ました!これはスウェーデンのチーズで、こちらのパイを作るときに入れます)。今気づきましたが、このパイのレシピ、載せ忘れていました。近いうちに載せたいと思います。

ピュッティパンナcooked by The Fish

Pyttipanna(ピュッティパンナ)は、伝統的なスウェーデン家庭料理の一つで、仕事や留学などでスウェーデンにある程度長く滞在する日本人のほとんどが好きになるスウェーデン料理です。
Pyttipannnaは日本で言えば、チャーハンみたいなもの。(チャーハンは中華料理だけど。)残り物のお肉やポテトを同じサイズに角切りにして、たまねぎと一緒にフライパンで炒めたものです。日曜日にはお肉(Söndagstek)を食べる習慣があるので、その余りが平日にPyttipannaとして食卓に登場するわけです。

余り物料理なので、何を入れてもいいのですが、ここではThe Fishのお気に入りの、野菜たっぷりPyttipannaを紹介します。

When the Fish cooks pyttipanna he always uses a lot of vegetables, not only potato and meat. If you eat this type of healthy pyttipannna, you don’t get the typical “I ate too much-feeling” after eating. Otherwise you have to lie down on the sofa and rest after eating traditional Swedish food, like a cow lies down in the Swedish fields.

フライパンを二つ用意します。一方のフライパンで、みじん切りにした玉ねぎを黄金色になるまで極弱火で炒めます。別のフライパンで、角切りにしたジャガイモとニンジンを中火でいため始めます。ジャガイモとニンジンが少し柔らかくなってきた頃に、角切りにしたズッキーニとブロッコリーを入れて引き続き炒めます。全てやわらかくなったら、いためた玉ねぎと小さく切ったSöndagstek(ステーキなどの余り物、細かく切ったソーセージなどでも良い)をいれ、塩コショウで味付けします。The Fishはこのとき、パプリカパウダーとカイエンヌペッパーを入れています。

食べるときは、半熟目玉焼きを乗せて、黄身を絡めながらいただきます。付け合せには必ずビートルーツのピクルスを添えます。このビートルーツ、何故か茹でたとうもろこしの味(?!)がしてとてもおいしいのです。

冷凍食品も一般に普及しています。タダいためるだけなのでとても簡単。でもこれだけだと余りにカロリーが高いし胃にもたれるので、半分ほどはミックスベジタブルにするとあっさりします。

スウェーデン料理のレストランでは、必ずと言っていいほどメニューに載っています。私は試したことはありませんが、IKEAのメニューにもあるようなので、日本でも食べられるかもしれません。とはいえやっぱり家庭料理の代表、うちで作ってみてください。

白身魚のオーブン焼きとザリガニのリゾットRestaurant J にて

やっと、スウェーデンにも熱い夏がやってきました。去年は寒くて悲惨な夏だったので、晴れの日はここぞとばかり、せっかくの夏日を逃さないように活動したくなります。とはいえ、仕事、引越し準備、などで時間の調整が難しいのに加えて、お腹の傷もまだ完治していない(泳げない!)、なんとももどかしい日々が続いています。
そんなときは、手軽にバケーション気分が味わえる、“レストランJ”に行くしかない!
と言うことで、今年も夕方急に思い立って船に乗りました。(去年の様子はこちら


冷えひえのCAVA。暑くてのどが渇いていたせいもあってか、感動的においしい。



ゆったりとビールやカクテルなど飲みながら夕食前のひと時をのんびり過ごしている人達。地元の人達だと思います。向こうに見えるのは Djurgården(ストックホルム東部の島)の先端です。

珍しく、特に腹ペコではなかったので前菜は二人で一皿にしました。特にお願いしたわけでもないのに別々のお皿に盛り付けて持ってきてくれました。明るくて気が利いて、とても感じのいいウェイトレスさんです。

メインは冒頭の写真の白身魚とリゾット。クリーミーなリゾットとサッパリした魚の組み合わせがとてもおいしい!

レストランの近くから、エレベーターで崖の上に上れる様になっています。


昔、The Fishのバンドが近くにスタジオを持っていたらしく、懐かしいから行ってみようかということになりました。が、面倒になって途中でまたレストランに逆戻り。
船が来るまでデザート代わりのストロベリーダイキリを楽しみました。


ストックホルムから、船で行って帰ってくるまでの所要時間は約3時間。(Jでの食事と短い散歩含む)
とても気軽に夏の気分が楽しめました。

魚の揚げ蒸し煮 cooked by The Fish

檀家のレシピより。びっくりするほど簡単でおいしい一品です。
炊き立ての、白いご飯といっしょに。

Before I started to cook “real fish” (not already cut, or a frozen one), I thought it is very difficult and takes time to cook. As for every thing you cook for the first time, cooking fresh real fish is not as difficult as you imagined.

What you need to cook the fish is
Tools: a Wok pan or some other wide pan and a sharp knife.
Ingredients: Fresh fish, Purjolök, ruccola,
Sauce: Sesame oil, Soy sauce, Sake, Gräslök, garlic, Ginger, Chilli,

You can buy daily fresh white fish like Grouper or Gös. Pink fish like RÖding is very nice as well. You can ask in the shop which fish is nice at the particular season. If you ask them to remove the skin and take out the stomach of the fish at the market, it is easier to cook at home. Just before you cook the fish, you make some cuts on both sides of the fish to increase the heat transfer into the fish.



Before you start to heat the wok pan, let’s make the sauce. Mix a little bit more than 1/2 a cup of soy sauce and 2 table spoons of Sake. Add chopped Gräslök, garlic, JGinger and Chilli. After that, start to warm up the wok pan with sesame oil. You should use quite a lot of oil (like half to 1 cup) for the nice taste. After some minutes, a wonderful smell will come from the warm pan, that is the smell of the sesame oil. Put the fish in the pan and fry it about 10 minutes.





Pour hot sesame oil on the fish from time to time during you fry, then you can cook the top side of the fish also without turning the fish. After that, you add the sauce which you already prepared and put a lid on. Even if you did not fry it perfectly, you steam the fish at this time.



When the fish is finished, add Purjolök, ruccola, coriander etc and serve it. Fresh lemon juice will also be nice together with this dish.



The fish is very nice together with white rice. The combination of the juice from the fish and the rice is wonderful. Please don’t put any soy sauce on the rice, but use this sauce instead.

The Fish’s father Roby is Italian and comes from Milan. Of course he loves nice food and cooking. According to him, ordinary bolognese (meat sauce) includes only small chopped onion but his mother (who is not from Bologna) always put celery and carrot as well. This is the Tuscan way to cook it. I was so happy to here that because I always make frittata for meet sauce with onion, celery and carrot.




Recently we have been looking for a new Kitchen all over Stockholm for our new apartment.
It is very fun and nice for us to choose our own kitchen but it takes time and energy. And of course the biggest problem is money. How much should we spend for the kitchen? Since we luckily got a nice apartment for such a nice price, we do not want to pay too much money for renovation. Packing has also started. It would be very difficult for me to pack with my stomach. Even carrying my laptop to work was almost to tough today. We will see.

昨日の夕方買い物に出かけたところ、偶然drpionさんと遭遇。そのまま夕食に誘っていただきました。
スウェーデンで食べるサーモンは、脂がのっていてトロリとしており、とてもおいしいです。




そして、典型的な日本料理の数々!とくに、おから、切り干し大根はなかなか食べられないのでお箸が止まりません。たっぷりの紫蘇の葉、お味噌汁に入った三つ葉、どちらもベランダで栽培されたものです。




盲腸手術の傷が開いてきてしまうのではないかと言うほどに、お腹が膨れるほど食べてしまいました。

そして、デザートには焼きたてのワッフルです。




スウェーデンに来てから2年も経つのに、スウェーデンワッフルを食べたのは今回が初めてでした。ベルギーワッフルなどと比べると薄めでサクサクとした歯ごたえが新鮮です。あまりのおいしさに、お腹を押さえつつ、2枚もいただいてしまいました。
おいしいお料理を、ありがとうございました!

今日で盲腸の手術からちょうど一週間目。抜糸はまだですが、劇的に回復しています。今日はくしゃみが普通にできました。人間の体の回復力はすごいなあと感じています。

納豆がきれたので、今日は仕事帰りに日本食材屋さんへ行ってきました。冷やし中華が安くなっていたので即購入。7月に入った事だし、あまり暑くないのが寂しいけれど、今夜は冷やし中華にしてみました。
あああ、やっぱりおいしい。本物でなくても、なかなか食べられないと思うから余計においしく感じてしまいます。でも近いうちにラーメンを打って本物の冷やし中華が食べたくなりました。がんばろう。

Even if the temperature was not so high, it was quite humid today, right? We ate summer food again.

冷やし中華 (Hiyashi-tyuuka) is one of the most common summer food in Japan. This is cold noodles with a lot of vegetables. It is nice because Japanese summer is enormusly humid and hot!!! We can buy a package of Hiyashi-tyuuka with fresh noodles and sauce at every super market in Japan. These are very cheep and quite nice. Quite a lot of people eat it for dinner. Also convenience stores like a Seven Eleven always have ready made Hiyashi-tyuuka and these are quite nice as well. But if you want to eat really nice one, you should go to a chinese shop or a Ramen shop in Japan. Then you can eat the real one.

I went to a Japanese food shop “Sun ai” today when I came back home from work. I found this package of Hiyashi-tyuuka. Even it is not fresh noodles, it is quite nice, I think. One package (for one person) is 14kr now. (it is discounted now).



If you are interested, maybe this is the time to try it! This package contains noodles, sauce and mustard for the taste. So, if you just add some vegetables, eggs, ham, chicken, shrimps.. etc… you can eat it very quickly!

This is how to make it according to the back side of the package (in Japanese). You can imagine from these pretty pictures but one important thing is you should wash the noodles with cold water after you boiled it. In addition, the boiling time is 5-6 min.



This sauce has sesame taste. Actually, basic Hiyashi-tyuuka taste is soy sauce and vinegar. I really miss that as well. I hope I can find it or make it myself in Sweden as well.

ゴーヤチャンプルー Goya chanpuru

夏と言えば、ゴーヤチャンプルー!スウェーデンでは手に入らないものと思っていたのに、ご近所さんの、drpionさん にアジア食材屋さんで入ることを教えてもらいました。次の日早速行ってゲット。この苦さがやっぱりおいしい。

“Goya chanpuru” is famous as typical Okinawa and/or Kyusyu Food. Goya is Bitter melon which is really really bitter but very good for your health (as always with Japanese food) and of course it has a nice taste.




Before you cook it you should remove the too bitter taste from goya. Put a little salt on the chopped goya and massage the pieces by hand. After some minutes, wash them with cold water and put into boiling water. Then you can use it. Your hands will smell like green grass but it’s no problem, it will disappear after a shower or if you wash your hands. Before you start to fry them you should put tofu in the microwave about 2 min to remove the water from the tofu.


Fry some vegetables, for example chopped carrot, with oil. When it becomes soft, add the tofu and the goya. Then, Dashi(fish soup stock), or Dashi powder, Mirin and Soy sauce should be added. When the liquid evaporates you should pour mixed egg. The egg gives the dish a milder taste. When you serve it, dredge fish flakes over the dish. If you don’t eat fish, you can skip Dashi and fish flakes. The taste will change, but it is still tasty. Small pieces of chopped meet are nice to fry together as well. You can create your own “Chanpuru”!


You can find these ingredients in Asian shops in Stockholm.Just to make sure, please call them and ask if they have what you want before you visit. Especially goya is not always ion the shops I guess.
